Spinach, courgette and bacon breakfast muffins

Ingredients

  • Two large courgettes, finely grated

  • 1 large handful of spinach, chopped

  • 1 finely diced onion

    3 rashes bacon, diced

  • 3 eggs

  • 1/3 C extra virgin olive oil

  • 1/2 C grated tasty cheese

  • 1/2 C flour of your choice (I used coconut flour) but plain would be fine

  • 1 1/2 tsp baking powder

  • Good crack of salt & pepper

Directions

Pre heat the oven to 180 degrees. Crack 3 eggs into a bowl and whisk. Add courgette (pat out any extra moisture from them on paper towels before you add to reduce the liquid), onion, bacon, olive oil, cheese, salt and pepper and stir together. Sift in the flour and baking powder. Mix together. Spoon into a greased muffin tray and bake until golden (approx. 20 mins). Enjoy for breakfast on the run or a healthy snack. Makes 12.
