Strawberry spinach salad with balsamic dressing

Ingredients

  • 1 C spinach

  • 1 1/4 C sliced strawberries

  • 3/4 C thinly sliced red onion

  • 1 C pecan halves

  • 1 tsp avocado oil

  • 1/4 tsp cinnamon

  • Salt & pepper

  • Dressing: 6 Tbsp olive oil, 3 Tbsp balsamic vinegar, 1 Tbsp Dijon mustard, 1 Tbsp honey, 1/4 tsp minced garlic

Directions

Place the spinach, strawberries and onion into a large bowl, set aside. Toss the pecan halves with the oil and cinnamon. Toast in a small pan over medium low heat until fragrant, approx 3—5 mins. Be careful not to burn them! Add the pecans to the salad. For the dressing, add all ingredients to a jar and shake well to combine. Drizzle dressing over the salad and season with salt & pepper. A lovely Summer salad!
