Apricot & almond snack bars

Ingredients

  • 1/2 C roasted unsalted almonds

  • 1/4 C sunflower seeds

  • 1/4 C pumpkin seeds

  • Pinch of salt

  • 1/4 C almond butter

  • 1/2 C dried apricots

  • 1 tsp vanilla extract

  • 2 Tbsp coconut oil, melted

Directions

Soak the apricots in boiling water for 5 mins to soften them, then drain. Mix in a blender all the ingredients. Line a baking container and press down to about 1cm thick, freeze for an hour before slicing. Makes 5 large bars or 10 smaller ones. Store in the freezer.
