Tomato spinach and feta Bacon & Egg cups

Ingredients

  • 12 bacon rashes

  • 8 eggs, whisked

  • 1 large tomato, diced

  • 1 C fresh spinach, chopped

  • Approx 30g of feta, cut into 12 cubes

  • Salt & pepper to taste

  • Bit of olive oil to grease the pan

 

Directions

Whisk 8 eggs in a jug, add a bit of salt & pepper if desired and set aside.  Lightly grease the muffin pan, then take a rasher of bacon and push it into the insides of the pan so it covers all of the muffin pan hole.  Do this for all 12.  Put in a few pieces of diced tomato, spinach and a cube of feta cheese into each.  Gently tip the egg in, nearly to the top of the bacon. trying to keep it inside the bacon ’cup’.  Cook for approx 15 mins or until egg is cooked through and they start going brown on the top.   Keep in a container in the fridge, great for breakfast or lunch the next day!  You could add any ingredients you wanted eg red onion, capsicum, pieces of kumara or pumpkin!  Makes 12.
