Apple bircher muesli

Ingredients

  • 1/2 C oats

  • 1/2 grated apple (I left skin on)

  • 1/2 C milk of choice

  • 1/4 C greek yoghurt (or a plain low sugar yoghurt of choice)

  • 2 Tbsp dried cranberries

  • 2 Tbsp walnuts roughly chopped

  • 1/4 tsp cinnamon

  • 1 Tbsp pumpkin seeds

  • Toppings: Other half of the apple, cut very thinly into matchstick sized pieces, 2 Tbsp walnuts roughly chopped to sprinkle on the top.

Directions

Combine all ingredients in a bowl (apart from the toppings) and leave in the fridge to soak overnight.  In the morning give it a good mix, tip into a bowl and top with the sliced apple and walnuts.  A delicious healthy breakfast!
