Comforting beef casserole

Calving Mums (or anyone who is time poor) book mark this recipe. It requires just 15mins prep in the morning and can be served with simple steamed veges on the side. Hey presto! Comfort food with minimal effort.

Ingredients

  • 750g of blade, chuck or stewing steak

  • 2 onions, sliced

  • 2 carrots, cut chunky

  • 2 sticks of celery, cut chunky

  • 1 can tomatoes

  • 1 C brown rice

  • 2 tsp oreganum

  • 2 Tbsp red wine vinegar

  • 1 Tbsp soy sauce

  • 1 tsp beef stock

  • 1 Tbsp tomato paste

  • 1 Tbsp honey

  • 1 tsp salt

  • Ground black pepper

Directions

Remove any excess fat off the steak and cut it up chunky. The crockpot will make the meat so tender it will break into smaller pieces when you stir it so don’t worry about cutting it up really small.

Add canned tomatoes then refill the can completely with water. Add all other ingredients and stir well.

Cook on low for 6-8 hours or until meat is tender, falling apart and the rice is cooked.

This casserole comes our nice and thick because of the rice, if you want it more saucy add more water.

Simply steam veges when you’re home from work and enjoy!
