One pot sausage and vege casserole

One pot dinners are a must when life is hectic. This one only takes 30mins to cook and there’s only one pot to wash, could it be any more perfect!

Ingredients

  • 1 onion

  • 2 garlic cloves crushed

  • 6-8 sausages

  • 1 can chopped tomatoes

  • 1/4 C tomato paste

  • 1 1/2 C beef stock

  • 1 Tbsp dried mixed herbs

  • 1 Tbsp balsamic vinegar

  • 2 C root vegetables cut chunky

  • 2 C spinach leaves

  • 1 C grated zucchini or carrot

  • 1/2 C grated parmesan cheese

Directions

In a large frying pan with a lid heat 2 tbsp of oil and fry the onion and garlic until soft. Add the sausages and brown but don’t cook through.

Add the tomatoes, tomato paste, beef stock, herbs, vinegar, stir well and bring to the boil. Add the root vegetables, simmer and cover. Cook for 15-20mins stirring a couple of times.

Once the vegetables and sausages are cooked through stir in the spinach, grated veges and parmesan. Cover again for two minutes.

Serve immediately.
