Easy feijoa and banana loaf

Ingredients

  • 2 large bananas, mashed

  • 6 large feijoas, pulp mashed

  • 75g melted butter

  • 2 eggs

  • 2 Tbsp maple syrup

  • 1/2 C flour (regular or coconut)

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp cinnamon


Directions

Preheat the oven to 180 degrees. Combine the banana and feijoa in a bowl, add melted butter next. Then add eggs, maple syrup, and whisk to combine. In another bowl mix together your choice of flour, baking powder, baking soda, cinnamon. Add the dry ingredients to the wet mix and combine by folding it in, don’t over mix it. Pour your mixture into a greased loaf tin or line the tin with baking paper. Cook in the oven for approx. 30 minutes or until a skewer comes out clean. Slice up and serve with butter. Great to pop into the kids lunch boxes too. YUM!
