One pot sausage pasta

Ingredients

  • 1 Tbsp olive oil

  • 1/2 onion, diced

  • 1 clove crushed garlic

  • 6—8 cooked sausages, chopped into bite sized pieces

  • 1 x 400g chopped tomatoes

  • 1/4 C tomato paste

  • 1 1/2 C beef or vegetable stock

  • 1 Tbsp dried mixed herbs

  • 1 Tbsp balsamic vinegar

  • 2 C dried penne pasta

  • 2 C baby spinach

  • 1 C grated zucchini/carrot

  • 1/2 C grated parmesan cheese to sprinkle on top

Directions

This recipe is great for leftover cooked sausages. If your sausages are raw, cook the sausages first in a pan and then chop up into bite sized pieces.

Heat oil in a large frying pan (you’ll need one with a lid), add onion and garlic and cook for 2 minutes. Add tomatoes, tomato paste, stock, herbs, vinegar and combine. Reduce the heat to a simmer and add pasta and stir. Cover with the lid and allow pasta to cook, stir when needed.

After approx. 15 mins, check the pasta is cooked. Stir in the grated veges to cook through, then the spinach and sausage pieces.

Once it’s all cooked, plate up and sprinkle parmesan on top. Season with salt and pepper if desired.
