Feijoa and Apple Crumble

Ingredients

  • 2 C of feijoa flesh

  • 4 apples (golden delicious or similar) diced up

  • Zest and juice of half a lemon

  • Sprinkle of cinnamon

  • 3 Tbsp coconut oil (melted)

  • 3/4 C almond meal

  • 1/2 C raw almonds, chopped

  • 1/2 C macadamia nuts, chopped

  • 2 Tbsp coconut sugar

Directions

Preheat the oven to 180 degrees. Combine the feijoa, apples, lemon zest, juice and cinnamon in a bowl. Mix together and tip into an oven proof dish. For the topping, in a bowl rub the almond meal and coconut oil together until it makes a crumbly consistency. Add in the nuts and mix together. Spoon the topping mixture over the top of the fruit until it’s evenly covered. Sprinkle the coconut sugar over the top of the topping mixture, and then cover with tin foil. Bake for approx. 25 mins, remove and check it and take the tin foil off for another 5 minutes so the top crunches up. Enjoy for pudding with coconut yoghurt or some ice cream for a treat. YUM! Serves 5.
