Mac n cheese vege slice

Ingredients

  • 1 C dried macaroni pasta

  • 1 Tbsp olive oil

  • 1 small onion, diced

  • 1 clove garlic, crushed

  • 3 tsp fresh thyme leaves (dried if you don’t have fresh is fine)

  • 4 rashers bacon, diced

  • 2 courgettes, grated

  • 1 large orange kumara, grated

  • 1/3 C self raising flour

  • 4 eggs, lightly beaten and seasoned

  • 1/2 C tasty cheese

Directions

Preheat oven to 180 degrees. Line a square 20cm cake tin with baking paper. Cook the pasta in a pot, following the instructions until it’s cooked. Drain well through fresh water and set aside. While the pasta is cooking, heat oil in a pan. Cook onion, garlic, bacon, stir until onion softens. Add thyme, courgette, and kumara until it’s all cooked through. Transfer to a large bowl. Add pasta, sift in flour, eggs and 3/4 of the cheese (leave a wee bit to sprinkle on top). Season with salt and pepper, stir to combine. Tip into your tin, add remaining cheese and bake until the cheese is golden and the slice is firm. Approx 25 mins. Serve hot for dinner with a salad or allow to cool and then chop up into pieces for an easy work lunch the next day.
