Quick creamy mushroom pasta

Ingredients

  • 1 packet spaghetti pasta (I used rice spaghetti but any pasta of your choice is fine)

  • 2 Tbsp olive oil

  • 1 red onion, diced

  • 2 cloves garlic, crushed

  • 2 Tbsp chopped fresh thyme

  • 1 tsp paprika

  • 500g mixed mushrooms, sliced

  • 1/2 C vegetable stock

  • 1 C coconut cream

  • 2 Tbsp soy sauce

  • 2—3 C baby spinach

  • Parmesan cheese to serve

Directions

Cook your spaghetti pasta in a pot of boiling water, following the packet instructions. Meanwhile in a pan, heat the olive oil over medium heat. Add onion, garlic, stir for 2 minutes until soft. Add in thyme, paprika, and then the mushrooms and cook for approx. 3 minutes. Add the stock, coconut cream and soy sauce. Simmer for 10 minutes until the sauce reduces slightly. Stir in spinach and season with salt and pepper. Cook until the spinach has wilted down. Serve on top of your cooked spaghetti, with parmesan grated on the top. Serves 5—6. Yum!
