Healthier apricot chicken - slow cooker recipe

Ingredients

  • 8 chicken drumsticks

  • 1 Tbsp olive oil

  • 1 C dried apricots sliced in half (I sliced them through the middle length ways so they still looked like a round apricot,)

  • 1 large brown onion, sliced

  • 1 C chicken stock

  • 3 garlic cloves, crushed

  • 3 Tbsp Dijon mustard

  • 1 Tbsp dried rubbed thyme

  • Juice & zest of 1 lemon

  • Salt & Pepper to season

Directions

Heat olive oil in a frying pan. Season chicken drum sticks with salt & pepper and then add to the pan, cooking until each side is browned but not cooked through. Meanwhile in a bowl combine chicken stock, lemon juice & zest, mustard, garlic and thyme, stir. Into a slow cooker, add half the sliced onion and half the apricots to the bottom, along with half the chicken stock mixture. Place chicken drum sticks on top, then add remaining ingredients. Cook on low for 6 hours. I served with Uncle Ben’s brown wild rice mix and broccoli. A delicious winter family meal! Serves 4. Enjoy!
