Lentil pattie lettuce burgers

Ingredients

  • 1 can brown lentils, rinsed & drained (I used Ceres Organics)

  • 2 tsp ground cumin

  • 1/2 tsp ground coriander

  • 1 tsp paprika

  • 1 medium carrot, grated

  • 2 small eggs

  • 1/2 C spelt flour to bind

  • Salt & pepper

  • Oil for frying (use a non-stick pan so less oil needed)

  • Burger = Iceberg lettuce leaves, sliced tomato, cucumber, grated carrot, teaspoon of mayo (homemade is best) and any other salad ingredients you would like

Directions

Put all ingredients into a bowl and mix well to form a thick mixture. Heat a frying pan with the oil. Use a table spoon to spoon the mixture into the pan to create pikelet sized burger patties, cook until golden on one side before flipping over, then cook the other side. Use the lettuce leaves as your bun, put the pattie in and load up your ingredients! Makes 8-10 patties.
