Stuffed curried eggs

Ingredients

  • 6 eggs

  • 2 Tbsp mayonnaise (I used Best Foods mayo)

  • 2 tsp celery, finely chopped

  • 1 tsp chopped chives

  • 1 tsp curry powder

     

Directions

Fill a saucepan and bring to the boil, add the eggs and cook for approx 7 mins. Pour the water off and run plenty of cold water over the eggs to stop them cooking. Shell the eggs and cut in half length wise. Carefully remove the yolks to a bowl. Add the remaining ingredients and mash together well. Season with salt and pepper. Spoon the mixture back into the cavity of the egg. Add a few extra chives to the top to garnish. Makes 12 halves.
