Salmon tartare with sesame & avocado

Ingredients

  • 200g fresh salmon

  • 1 spring onion, finely sliced including green stalks

  • 1 ripe but firm avocado, diced

  • 1 tsp soy sauce

  • 1 tsp mirin or rice vinegar

  • 1/2 tsp sesame oil

  • Juice from one lime or half a lemon

  • Salt and pepper to taste

  • 1 large cucumber, sliced in thick diagonal rounds

  • 1 tbsp sesame seeds and a few chives to garnish

Directions

In a medium bowl mix together the salmon, spring onion, soy sauce, mirin and sesame oil.

In another smaller bowl, gently toss the avocado, lime or lemon juice and salt and pepper.

Top each cucumber slice with salmon and avocado, sprinkle with sesame seeds and spring onion.

Makes 10 to 12
